Introduction
These are healthy snacks for those on the go. With a little pre-preparation, avoid expensive snacks by preparing these treats (and freezing them) in advance. When made as described, these snacks provide a low carb/calorie snack, that is high in fiber and protein. Also, snacks have very low fat content (with the exception of the coconut alternative), and are perfectly satisfying! These are healthy snacks for those on the go. General Recipe:
- Egg Whites (or Egg Beaters)
- Soy Flour (alternates 100% Cocoa, cornmeal, coconut flour)
- Extract (Vanilla or other preference. Alternates Coconut for coconut, butter for "corn cakes," lemon for lemon poppy, etc.)
- Splenda
- Vitamin Powder (flavorless)
- Water (for Coconut)
Non-Stick Spray (Appropriate Flavor)
Tips
Storing: Cool properly, wrap in wax paper and place in freezer bags. (I typically put 2 per bag so that I can grab a quick "100 calories" on the go). Place in freezer.
Alternative versions:
Coconut - Replace Soy Flour with Coconut Flour, use coconut extract, and add additional 2 tablespoons of water. This will change nutritional values.
Corn Cake - Add two tablespoons corn meal, reduce splenda, replace vanilla extract with butter flavor, and add a pinch of salt.
Chocolate - Replace soy flour with 100% Coco powder (unrefined). Use extract of choice.
Lemon Poppy - Use original recipe, replace vanilla extract with lemon and add an additional 1.2 teaspoon of poppy seeds.
Finally, I used a flavorless vitamin mix (powder) that also has no color, but with a similar caloric value as listed in this recipe.
Directions
Heat skillet (non-stick or spray with cooking spray).
Cook as one would regular pancakes.
