Ingredients

1 pound turkey
1 bell pepper (any color - I like red) diced
1 pound mushrooms rough cut into pieces
1 Can diced tomatoes
10 Md/SM Wheat Tortillas
12 eggs
Directions
Brown trukey in a large pan. When it is close to done, add diced bell pepper and saute for a few minutes. Add mushrooms and continue cooking until turkey is cooked through and veggies are desired consistency.
I then put this in the fridge.
In the morning warm up a portion of the turkey mixture in a small skillet. When heated through add 1 egg and scramble.
Put mixture in tortilla.
