Number of Servings: 4

Ingredients

    1-1/4 brown rice, cooked
    1 c lentils
    1 cup fresh beets, peeled and shredded
    1/2 tsp salt
    black pepper
    thyme (I've used Herbes de provence in the past, and it's been fine)
    1/2 tsp fennel
    1 tsp mustard powder
    onion, grated
    2 cloves garlic, minced
    1 tbs almond butter (I've substituted peanut butter in a pinch)
    1/2 c dried breadcrums

Directions

Peel and shred beets in food processor. Replace shredder with chopping blade. Add beets, rice, lentils, fennel, and pulse til it resembles hamburger. Add remaining ingredients. Let sit about a half-hour before cooking in cast iron skillet. Sear each side to make it crispy on outside.

Serving Size: Makes 4 big burgers
