Ingredients

1c Gluten Free Flour Blend w/ xantham gum
1tsp Baking Powder
1 large egg
1c Whole Milk or Buttermilk***
1tbsp Apple Cidar Vinegar
3tbsp Unsalted Butter (42 g) (melted)
1tbsp coconut/palm sugar
***Substitute 1 tablespoon vinegar or lemon juice plus enough milk to equal 1 cup. Let stand 5 minutes.
Tips
*Coconut sugar is known for low GI. So still high carbs (1.5g (.37tsp sugar)/serving) but worth it. To me. :)

**Gluten-Free Flour Blend:

Combine 2 cups rice flour, 2/3 cup potato starch, 1/3 cup tapioca flour and 1 teaspoon xanthan gum. Use appropriate amount for recipe; store remainder in container with tight-fitting lid. Stir before using.
Directions
Set out eggs to warm (otherwise when mixed with melted butter it will harden)
-Mix butter, egg, milk in small bowl
-Add sifted flour & baking powder
-Let stand 10m to rise
-Meanwhile, heat skillet on Med
-Splash/Sprinkle water on skillet to see if heated.
-Pour one small pancake.
-Look for bubbles to come through and pop. Flip
-Adjust heat according to desired brown color.
(mom usually threw it away. My daughter eats them. :) )
-Repeat for the rest. Store in heated/warm oven till done.
Enjoy.
