    1 1/2 c. soy milk
    1 1/2 tbsp. white vinegar
    mix together and set aside
    1 c. cornmeal
    1 c. flour (1/2 white, 1/2 whole wheat)
    2 tbsp sweetner (agave nectar)
    3/4 tsp. salt
    1 tsp baking powder
    1/2 tsp soda
    2 tbsp vegetable oil


pour into bread pan, bake at 400 for 25 minutes. makes 8 servings

  • Incredible!
    I've made a recipe very similar to this numerous times. The only differences are I dont' add any oil and I usually add a whole 1/4 cup of sugar for added sweetness. I also use stone ground whole grain cornmeal and whole wheat pastry flour for more texture and fiber. My entire family loves this one! - 12/16/10

    I made this tonight and it's delicious. I used the ingredients exactly as written. I'd put more sweetness into it, but even without the sweetness, it's fabulous. I have a new favorite. Thanks for sharing. - 10/5/10
