Introduction

Ingredients

    2 Tbsp Oil, butter, or bacon grease
    1/2 yellow onion
    2 stalks celery, chopped
    3 carrots, chopped
    4 small potatoes, chopped into bite size pieces
    2 cups cooked turkey, chopped/cubed
    8 cups turkey broth (homemade from the leftover bird is wonderful!)
    2 cups milk, or cream
    1 Tbsp poultry seasoning (or to taste)
    1 tsp salt (or to taste)
    1/2 tsp black pepper (or to taste)
    arrowroot powder or cornstarch to thicken

Directions

heat oil in pan, add chopped veggies and saute until tender. Add broth to pan, add potatoes, turkey, and spices. Cook until potatoes are tender. Add the milk or cream and heat through. Use arrowroot or cornstarch mixed with water (per instructions on item) to thicken.


Serving Size: makes approximately 8 - 2 cup servings
