Introduction

A tasty curried version of vegetable chicken soup. A tasty curried version of vegetable chicken soup.
Number of Servings: 20

Ingredients

    4 chicken breast - boiled in 12 cups water, shredded (Save the water!)
    4 large carrots cut into fat slices
    3 parsnips peeled
    1 cup chopped onion
    4 cups baby summer squash - sliced in fat slices
    2 cups bok choy - chopped
    12 cups chicken stock
    4 tbsp curry powder
    Any other spices/herbs you choose
    Salt and pepper to taste

Tips

This is a very thin soup with lots of veggies and shredded chicken. I often add 1/2 cup cooked quinoa for variety to each bowl served.


Directions

Put reserved water from boiling chicken in big pot. Add all other ingredients except salt. Bring to boil, simmer for 3-4 hrs until veggies are tender. Add salt to taste.
