Ingredients

    1 cup of light mayonnaise
    1/2 cup fresh basil leaves
    juice of 1/2 lemon
    1/2 cup plain yogurt
    2 cups poached chicken breast
    1 cup cooked and pealed potato
    1 red pepper, diced
    1 green pepper, diced
    1 yellow pepper, diced
    1/2 cup black olives
    season to taste
    Basil sprigs for garnish

    Puree the mayonnaise and basil in a blender or food processor. Add lemon juice. Scoop into a large bowl, stir in the yogurt and mix well. Fold in the remaining ingredients. Cover and chill for at least 3 hours to allow the flavors to mellow.

Directions

You may use leftover baked chicken for the recipe, but poaching chicken helps to retain the moisture in the meat.
