Ingredients

    0.5 cups artichoke hearts, drained
    0.5 cups roasted red peppers, drained
    0.5 cups pesto sauce
    1lb linguini or other pasta
    2 tsp olive oil
    Parmesan cheese, grated to serve

Tips

Experiment with different pasta shapes.


Directions

Cook pasta, according to instructions. Meanwhile, chop artichoke hearts and red peppers, and mix with pesto. Drain pasta when it is cooked to desired firmness, then heat oil in large frying pan, then add pasta and stir over the heat for about 2 minutes. Add pesto and vegetable mix, cook for a further 2 minutes until heated through. Serve with about 1tbsp parmesan cheese on top.
