Ingredients

1 cup old fashion rolled oats
1-1/8 cup Light Vanilla Silk SoyMilk
1/8 cup Splenda brown sugar blend
1/8 cup Organic Light Brown Sugar
4 oz unsweetened applesauce
2 egg whites
2/3 cup Red Whole Wheat Flour, All-Natural, KIng Arthur
1/3 c Bob's Red Mill Whole Grain Soy Flour, 35% Protein
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 Tbsp. cinnamon
1/2 tsp nutmeg
1/8 tsp cloves
1/8 tsp allspice
1/4 c raisins
2 Tbsp chopped dried cherries
1/2 c chopped pecans
Directions
Soak the oats and in soymilk for about one hour.
Preheat the oven to 400 degrees.
Spray muffin pan with cooking spray.
Combine the oat mixture with the applesauce and egg whites, and mix until combined.
In a separate bowl measure and whisk the dry ingredients together. Stir in nuts, raisins and cherries.
Add dry ingredients to wet and mix until just combined.
Do not over mix the batter or the muffins will be tough. Spoon muffin mixture into muffin pan.
Bake for 20 minutes or until done.
