Ingredients

    2-10 oz packages of frozen spinach thawed and drained
    1.5 cups diced mushrooms
    1 garlic clove
    1/4 C grated Parm Cheese
    1 Tsp dried oregano
    10 Egg Whites
    1/2 C Low sodium Marinara sauce

Tips

I had to cook mine a little longer than recommended


Directions

mix all ingredients together except egg whites
Beat egg whites until they form stiff peaks
fold into the spinach mixture

Spray muffin tin with Olive Oil
Fill each cup with spinach mixture
Cook about 20-25 minutes until a knife comes out clean
Top with a tsp of marinara and a pinch of parm cheese.
