This is a low fat version of an old family favorite. We loved this recipe with cream cheese, but the low-fat cottage cheese version is still super tasty. Ingredients

    1 2 1/2 Ib. Sirloin Tip Roast, trimmed
    1 15 oz. can Swanson Beef Broth, 50% less sodium/Fat Free
    1 cube Beef Bouillon (or 1 tsp. bouillon soft packed)
    1 packet, Good Seasons Italian Salad Dressing Mix (dry)
    3 cups Fresh Mushrooms Sliced
    2 cup (16 oz. tub) Fat Free Cottage Cheese, blended till smooth

Tips

Serve atop pasta, or for a lower Carb option, I eat it atop steamed greens (collard, kale, etc.) It is also good atop fresh spinach or spaghetti squash.


Directions

Place roast, beef broth, beef bouillon, and Italian Seasoning mix into the crock pot. Cook on high for 6 hours, or on low for 8 hours. In the last hour, shred the beef in the pot, add the cottage cheese (blended in blender till smooth), and the fresh sliced mushrooms. Stir in till combined. Let cook 1/2 to 1 hour more.
