Ingredients

3 5oz. Boneless Skinless Chicken Breasts
2 29oz cans Pinto Beans, not drained
2 15oz. cans Swanson Chicken Broth 99% Fat Free
1/2 cup Pace Fire Chipotle & Jalapeno Salsa
2 Tbls. Ground Cumin
3 cups Mexican Blend Shredded Cheese (2% or Light)
Tips
The friend who gave me this recipe served tortilla chips on top of the soup. Fine for the kids but will add Carbs.
Directions
Cook chicken breasts in crock pot for 3 or 4 hours. Pour out juice and skim off fat, shred the chicken in the pot. Add pinto beans (not drained), chicken broth, salsa, cumin, and shredded cheese. Stir and let cook another 1/2 hour at least.
