Introduction
This recipe makes a great main dish to be paired with a salad or rice. It has a bit of a Mexican flair, but the chicken is both sweet and savory, thanks to the addition of the zero-calorie root beer. For a few extra calories, you can add extra toppings to the tostadas after baking, such as lettuce, fat free sour cream, and diced tomatoes or onions. If you do not want to make these tostadas, this chicken is also delicious by itself over rice or as a taco filling or even in a salad. Ingredients

FOR CROCK POT CHICKEN:
1/2 cup diet root beer (I prefer to use Zevia, as it is sweetened with monkfruit and stevia instead of aspartame, but any diet root beer will work)
2 tbsp. taco seasoning
4 tbsp. tomato paste, Italian
1 tsp. garlic powder
2 tsp. Italian seasoning
1 tbsp. minced onions (dried)
8 oz. chicken breast
Salt and pepper to taste
FOR TOSTADAS:
4 Ortega tostada shells
1/2 cup refried beans
1/4 cup fat free shredded mozzarella (or other fat free cheese with similar calories)
Cooking spray
Directions
SLOW COOKER CHICKEN:
1. Place all ingredients in a slow cooker and mix well. Add salt and pepper to taste. If you use frozen chicken, it is best to thaw it out first.
2. Turn slow cooker on low and allow the chicken to cook for 1 to 2 hours, stirring occasionally. Sauce will thicken as it cooks, so you can add a bit of water or chicken broth if it becomes too thick.
3. Remove chicken from sauce and use a fork to shred it. Place shredded chicken back in slow cooker and mix well with sauce.
4. Continue cooking on low for 1 to 2 hours, adding water or chicken broth if it becomes too thick.
TOSTADAS:
1. Spray cookie sheet or baking pan with cooking spray.
2. Place four tostada shells in pan and cover each with a thin layer of refried beans.
3. Top beans with chicken mixture from the slow cooker.
4. Bake at 350 degrees for 8-10 minutes, watching carefully. If edges of tostadas begin to burn, remove them.
5. Sprinkle cheese on top of tostadas and bake an additional 2-3 minutes, till cheese is melted. If you prefer, you can skip this step and allow the cheese to melt on its own, though fat-free cheeses do not tend to melt as quickly.
6. Serve and enjoy!
