Ingredients

Eggplant, fresh, 1 eggplant, peeled (yield from 1-1/4
1 Med. Green Bell Pepper, .5 serving
Onions, raw, 1 large
*Extra Virgin Olive Oil, 2 tbsp
Garlic, 2 cloves
Parsley, 2 tbsp
Bread crumbs, dry, grated, seasoned, 1 cup
Whole Wheat Flour, 0.5 cup
OPTIONAL: SALT AND PEPPER
Directions
Peel and boil eggplant until it becomes soft, typically for about 10 minutes. Meanwhile, while eggplant is boiling, cup up veggies and place in a large bowl with remaining ingredients. When eggplant is done, completely drain and mash up very well. A potato masher is good for this. Add to bowl with other ingredients mixing well, and refrigerate for about 10-15 minutes. This makes it easier to form patties. Form into slider-sized patties and refrigerate for another 10-15 minutes. If you have a standard cookie cutter, that works perfectly. This helps them hold together better while cooking. Place patties on a seasoned baking pan. Bake for about 25 minutes in a 400 degree preheated oven. Flip over in about 10 minutes. Serve on a bun or alongside your vegetables, grains, or salad. Chef’s Note: Do not skip or try to shortcut the refrigeration or your patties may not come out correctly. The refrigeration part is very important to help patties hold together.
