Ingredients

1.5 cups uncooked Minute Rice
1/2 large onion, chopped
1 T soy sauce
1 T Sunbird fried rice seasoning
1 medium eggs, beaten
Tips
Trade the white rice for brown for a healthier option.
Use a good nonstick skillett and olive oil or no oil at all if possible to omit the butter.
This is all I had on hand at the time.
Directions
Cook rice per instructions. Let cool.
Add 2 T butter to skillett. Fry rice and onion.
Clear an area in the skillet and add the rest of the butter and then the eggs. Scramble eggs.
Incorporate back into the rice mix.
Sprinkle seasoning and soy sauce and mix through.
