Ingredients

    1 whole wheat tortilla
    Pam olive oil spray
    grilled or backed chicken... 4oz
    sliced zucchini
    shredded colby and monterey jack cheese

Directions

I usually baked a few boneless, skinless chicken breasts at the beginning of the week to make them available anytime. Baking the chicken adds to the prep time.
One also needs a panini grill.

1. Spray the panini grill lightly with Pam Olive Oil spray to prevent sticking.
2. On a separate plate place the tortilla.
3. On top of the tortilla layer the chicken (cut into strips or cubes), cheese and zucchini.
4. If desirable one can add lettuce or other vegetables.
5. Fold the tortilla in half and place on the panini grill.
6. Grill for at least a minute or longer if desired.

Serves one.
