Number of Servings: 10

Ingredients

    extra lean ground turkey
    low sodium white beans (2 cans)
    onion
    garlic
    collard greens (1 lb)
    chicken broth
    cumin
    smoky paprika (1 tsp.)
    fresh cilantro
    canned, chopped green chilies (2 7-ounce cans)

Directions

Heat olive oil, add onions and garlic over medium heat for two minutes. Add turkey, break up, add spices....continue cooking until turkey is cooked. Add Chicken broth, drained and rinsed white beans (I mash mine somewhat to thicken chili), and collards. Simmer 20 minutes. Chop and add cilantro. Simmer 10 more minutes. When complete but still hot, add grated cheese.

Serving Size: 10 1-cup servings
