Ingredients

    2.5 cups catelli smart pasta (about 5 cups when cooked)
    1 cup frozen baby peas
    1 english cucumber, diced
    1 Med. Green Bell Pepper, diced
    Feta Cheese, 100 grams
    1 cup sliced black olives
    1 Tbsp Avocado Oil
    2 Tbsp Olive Oil
    4 Tbsp red wine vinegar
    1 tsp salt
    1/2 tsp coarse ground pepper
    2 tsp dried oregano
    1 clove garlic, minced

Tips

could add onions and tomatoes and way more garlic if you wish. My son won't eat them, so I leave out.


Directions

Cook the pasta al dente, rinse under cold water, and drain well. Add the frozen peas (do not cook), chopped green pepper, chopped cucumber, black olives and feta cheese. Make a dressing of the oils, vinegar and spices, and pour over salad. Mix well.

Serving Size: Makes 12 cups or 6 2-cup servings
