Ingredients

4 tomatoes, diced
1 tablespoon garlic powder
1 tablespoon Italian seasoning
1 tablespoon ground turmeric
32 oz extra firm tofu, drained
1 onion, diced
1 red bell pepper, diced
1 cup mushrooms, diced
0.5 cup nutritional yeast
salt to taste
Tips
I recommend using organic tofu.
It's very important to drain and dry out the tofu a while before using it in a recipe so that it will absorb the flavors in the recipe. If it is still filled with the water it was packed in, it won't absorb the flavors in the recipe.
Don't worry about cooking the tofu too long, it's not necessary.
Directions
Drain tofu and set aside in towels for at least 30 minutes before making recipe.
-- Dice tomatoes and remove seeds/liquid.
-- Dice other veggies.
-- In bowl, combine garlic powder, Italian seasoning and turmeric.
-- Crumble tofu into the bowl and mix to combine. Set aside.
-- Spray large skillet with extra virgin olive oil cooking spray. Heat over medium heat.
-- Sauté chopped onion about 5 minutes.
-- Add tomatoes, peppers and mushrooms and sauté about 5 minutes.
-- Add tofu and nutritional yeast and sauté about 5 minutes, stirring frequently.
