Ingredients

1 heart of romaine lettuce, chopped
1 medium tomato, diced
1/2 cup cucumber slices
1 medium carrot julienned
2 tbsp thin sliced red onion (about 2 slices)
Tips
This salad is excellent with 2 tbsp crumbled blue cheese (about 50 calories), 1 tbsp raw pumpkin seeds (about 35 calories), and either light Caesar dressing, or light raspberry walnut vinaigrette (both Ken's brand for about 80 calories per serving). If you are using a vinaigrette, add apples instead of croutons for a great sweet crunch.
Directions
Chop lettuce, dice tomatoes, slice cucumber, julienne carrots, slice onion and toss all together in large bowl.
