Ingredients

    1 med potato( I used klondike goldust)
    2 radishes
    1/2 zucchini
    1 large egg
    1 large egg white
    1tsp curry
    1/4 tsp garlic powder
    1/4 tsp red pepper flakes
    a dash of Himalayan pink salt

Tips

I served with low fat cottage cheese for added protein.


Directions

shred veggies.
rinse, drain, and dry shredded potato
mix all ingredients, including seasoning.
scoop onto hot griddle, I used a griddler so it works as a press, but you can just press with a turner. cook for about 4 minutes a side.

Serving Size: 1 serving = 8 mini pancakes
