Introduction

Hearty, low-fat chili to warm up a winter night. Hearty, low-fat chili to warm up a winter night.
Number of Servings: 6

Ingredients

    1 medium onion, diced
    2 stalks celery, sliced
    1 green pepper, diced
    1 cup water
    4 cups cooked pinto or red beans
    (I cook beans in big batches and freeze in four cup servings)
    1/2 lb extra lean ground beef
    1 pkg club house hot'n'spicy chili seasoning
    2 cups canned or fresh tomatoes, diced.

Tips

Good served with fries or potato wedges. Leftovers great for haystacks.


Directions

In large cook pot, bring water to boil, add onion and celery, and cook until tender. Meanwhile cook ground beef in fry pan with no oil just until lightly browned, and cooked through. Add with green peppers, beans, chili seasoning and diced tomatoes and simmer until flavours blend. Add more spice to suit your tastes.
