Introduction

Number of Servings: 30

Ingredients

    1 1/2 cups of avocado flesh (very ripe but not brown)
    1 cup of coconut sugar
    2 eggs
    1 cup of dark cocoa powder
    6 oz (1/2 bag) of dark chocolate chunks - I used Whole Foods brand - 67% cacao
    1 tsp. of baking soda

Tips

Can substitute 1 c. honey for coconut sugar or 2 ripe bananas for coconut sugar. If using bananas, mix in food processor.


Directions

1. Preheat oven to 350 degrees
2. In a bowl using a hand mixer, mix together avocado and coconut sugar until smooth. Add the eggs.
3. Mix in the cocoa powder and baking soda.
4. Stir in chocolate chunks.
5. Drop dollops of cookie dough on a baking sheet with parchment paper. Flatten slightly with back of spoon.
6. Bake for 8-10 minutes or until the cookies don't stick as much to the paper as they did before baking.
7. Cool and store in airtight container in refrigerator.
