Ingredients

10 ounces (2 1/2 cups), shredded sharp Cheddar
6 ounces, Gruyere, shredded
1 tablespoon flour
1 cup beer (I use Franconia Kolsch)
1 teaspoon spicy brown mustard
1 clove garlic, sliced in half
Tips
Stir in a figure-eight pattern with wooden spoon.
Make sure you mixed the cheese and flour completely and add cheese GRADUALLY to avoid a clumpy mess.
Shredded cheese works MUCH better than cubed.
Adjust consistency with beer if needed.
Directions
Toss cheese thoroughly with flour.
Boil beer over medium heat. Reduce to a simmer and add cheese gradually while stirring. Once the cheese is fully melted, stir in the mustard.
Rub inside of fondue pot with garlic, then discard garlic. Transfer fondue to a warm fondue pot.
Serve with veggies, bratwurst, bread (I recommend sourdough with this one), and fruits (Granny Smith apples work well)
