Ingredients


    Ingredients:
    Cucumber (with peel), 1 cucumber cubed
    Red Onions, raw, 1 cup, chopped
    Red Ripe Tomatoes, 2 medium diced
    Red Bell Pepper, 1 pepper diced
    Chickpeas (garbanzo beans), 1 15oz can, drained and rinsed
    Black Olives, 15 jumbo halved

    For The Dressing:
    Extra Virgin Olive Oil, 3 tbsp
    Red Wine Vinegar 4 tbsp
    Oregano, ground, 3 tsp
    Salt and pepper if desired

    Feta Cheese, 2 oz sprinkled on top

Tips

can add different olives, more feta, pepperocinis
I like to eat in a pita pocket with grilled chicken breast and a little bit of hummus.


Directions

chop all veggies and mix in bowl. Whisk dressing together and pour over top.
