Granola Granola

Ingredients

    100g flaked almonds
    40g coconut flakes (unsweetened)
    63g walnuts, chopped
    62g macadamia nuts, chopped
    65g raisins
    50g dried cranberries
    40g dates, chopped
    3 Tbls coconut oil
    2 Tbls extra virgin olive oil
    8 Tbls honey (runny)
    2 tsp ground cinnamon (or other sweet spice like ginger)
    200g rolled oats

Tips

Mix and match to suit your taste. Pack divided into bags to make portions easily ready.


Directions

Set dates aside until the end. Mix remaining dry ingredients together. Gently heat and melt the honey and oils before mixing into the dry ingredients. Spread the mixture into two large baking trays and bake at 140C/275F/gas mark 1 approximately 35 minutes or until golden brown, mixing occasionally and respreading evenly. Transfer to a large bowl and mix in the dates and allow to cool completely before storing airtight.
