Ingredients

1/4 cup packed brown sugar
1/4 cup soy sauce
3 Tbsp. red wine vinegar
1 Tbsp. lemon juice
3 garlic cloves, minced
1 tsp. ground ginger
1 tsp. pepper
2 salmon fillets (about 1 inch thick)
Directions
In a large ziploc bag, combine the first 6 ingredients and add salmon. Turn to coat the entire salmon and then refrigerate for 15 minutes, turning once.
Coat grill rack with nonstick cooking spray before starting the grill. Remove salmon from marinade and place skin side down on the grill rack. Discard remaining marinade. Grill covered over medium heat for about 15 minutes or until salmon flakes easily with a fork. Ready to serve!
To add some extra flavor to the marinade you can add a small amount of pineapple juice or hot sauce, depending on your taste.
Makes 4 serving of 1/2 fillet each. Very tasty with asparagus and rice pilaf or red skin mashed potatoes.
