Ingredients

    1 tsp toasted sesame oil
    1 Tbsp coconut oil
    1 medium onion, diced
    4 cloves of garlic, crushed
    1 Tbsp fresh ginger, grated or finely chopped
    1 tsp coriander seeds
    1/4 tsp mustard seeds (optional)
    1 cup dry red lentils
    3 cups water
    2 tsp turmeric
    1-2 Tbsp lemon or lime juice
    cilantro

Tips

Dahl is delicious served over half of a baked sweet potato and covered in cilantro. Your leftovers may thicken and can be used as a sandwich paste or dip. Will thin when heated. Tomato and spinach are also delicious additions to this dish.


Directions

1. Heat coconut and sesame oil in pot or dutch oven.
2. Saute onion, garlic, and ginger over low heat for a few minutes. If using raw turmeric instead of ground, add here.
3. Add mustard and coriander seeds, stir two minutes to toast.
4. Add ground turmeric and lentils, stir another minute.
5. Add water. Bring to a boil, then reduce to a simmer, covered, for approximately 20-30 minutes, stirring often.
6. When finished, add lemon or lime juice and fresh cilantro (optional).


Serving Size: Makes 4 main dish servings.
