Ingredients

    1 boneless skinless chicken breasts, diced and cooked with your favorite spices ( no added salt)
    Shredded Romaine lettuce
    1 medium or several cherry tomatoes, diced
    Pace salsa
    About 1 cup shredded cheddar cheese
    About 3 T sour cream
    8 small corn tortillas fried in vegetable oil and shaped into taco shells.

Tips

Make this healthier by using low or fat free cheese and sour cream (or plain yogurt).


Directions

cook chicken over medium heat, adding your favorite spices (chili powder, lime). Fry tortillas in about an inch of vegetable oil well heated over medium heat. Immerse half of each tortilla in the oil, holding with tong, until crispy. flip with the tongs and fry the other side, keeping the desired shape. Drain on paper towel. Prepare the toppings in small bowls. Add about 2 T chicken to each taco and then add desired toppings. 1 serving equals 2 tacos.
