    1/2 C finely chopped artichoke
    1/4 C sliced green onion
    1 T lemon juice
    1 tsp olive oil
    1/2 tsp oregano
    1/8 tsp Cayenne
    6 oz white tuna, drained
    2 Thomas Light English Muffins (split & toasted)
    6 T shredded Parmesan


Preheat broiler. Combine first seven ingredients (artichoke-tuna) and spread on four muffin halves, top with cheese. Broil four minutes or until golden.

Serving Size: Makes two servings (two halves each)

    Like the oregano and the artichokes added. Great idea to change up a tuna melt. I don't add oil to mix and also have tried different cheeses or even laughing cow light wedges on the muffin or mixed in with the tuna instead of the Parmesan, all good. - 2/27/17
