Introduction

Ingredients

    1 tin Kingfisher shredded crab meat, drained
    1 tin wild pacific red salmon, drained
    3 tbsp butter
    100 ml full fat raw milk
    50 ml double cream
    2 cups shredded cheddar cheese
    4 eggs beaten
    salt and pepper to taste
    1/2 cup green onions chopped whites separated from greens
    1 yellow onion very finely chopped


Tips

I served this with cream of spinach soup on the side. The original recipe calls for tuna so I'm sure other types of tinned fish would work fine. For even lower carb content omit milk and use all cream and use a no carb cheese, such as gouda.


Directions

Preheat oven to 180 Celsius (gas mark 4) In a small saucepan melt butter in cream and milk, do not let boil. Remove from heat. Stir in cheese until melted. Add yellow onion and white parts of scallions. Stir into eggs. Add salt and pepper to taste. Pour into a greased deep bowl or deep pie plate. sprinkle green parts of scallions over top. Bake in oven for about an hour until the middle is set and the top starts to brown. Allow to cool slightly before slicing.
