Ingredients

Olivio, Olivio Buttery Spread, 5 sprays, 1 serving
Egg, fresh, whole, raw, 2 large
Trader Joe's Cowboy Caviar corn, black bean & pepper salsa (2 tbsp), 1 serving
Tips
I used a rubber spatula like the ones you use when baking and wiping the side of the bowl, pressing gently in various places on the top of the omelet once folded over - not a pancake flipping spatula and not even pressure (learn this at a fancy brunch with omelettes to order) (I see omelet spelled two ways: omelet and omelette)
Directions
Scramble two eggs with fork in glass.
Spray frying pan with Olivio and set to med-low heat.
Pour in egg.
When egg cooked about 3/4 way, spoon on 1/2 side of the egg the 2 TB Salsa (Cowboy Caviar makes all the difference! Totally different than regular salsa).
Fold other half of egg over top to create omelet (wish I took photo - will add later)
Press top occasionally with spatula to finish cooking (about another minute or two).
Serve - share if you must ;) (my husband had some - LOVED it! and he said this salsa makes it so you don't need cheese).
