Introduction

These are a fast and healthy version of my favorite breakfast item. I cook a batch of these on Sunday and then put them in baggies to eat on my way to work. Makes a good mid morning snack too. Ingredients

    1 serving (1/4 c. dry) cooked quinoa
    1 scoop (about 6 Tbsp) Whey Protein Powder
    1 c whole wheat flour
    2 egg whites
    1 tsp soybean oil
    1/2 tsp baking powder
    1/2 c Soy milk

Directions

Makes 8 servings of 4-5 inch pancakes.

Whisk items together in a glass bowl thoroughly. Spray non-stick coating (like PAM) on your frying pan and heat with medium heat. Spoon 1/8 of the mixture onto the pan. Cook until bubbles are coming through the middle then flip and cook for another 30 secs to 1 minute.

Serve with a bit of maple syrup or honey. YUM!
I use Vanilla flavored protein powder. Will keep in the fridge (ziploc baggy or tupperware) for several days. Excellent portable snack for traveling!

Variation can be added with blueberries, cherries, grated apple, or banana and walnuts.

    I was looking at these and they sound really great but the quinoa isn't included in the nutritional information but would only raise the calorie count of each pancake by 21 calories. I'll have to try them for a twist on the protein pancakes I usually make. - 3/30/09

    I made these and added blueberries. I thought they were very good, but my husband did not like them at all (but he seems "opposed" to anything healthy). - 5/18/08
