Ingredients
-
Libby's 100% Pure Pumpkin, 15 oz. can
Duncan Hines Signature Spice Cake Mix, 1 pkg.
1 large egg
1/4 cup water
1/3 cup Canola Oil
6 TBSP chopped walnuts
Tips
You can substitute 1/3 cup unsweetened applesauce for the Canola oil to reduce the calories even further, but do not use the sweetened kind: the cake mix is already sweet enough!
Directions
Preheat oven to 350F.
Spray a glass loaf pan with Pam Baking Spray.
In a large glass bowl, mix everything but the walnuts with a hand-mixer until evenly blended. Then stir in the walnuts to distribute them evenly through the batter, and pour the mixture into the sprayed loaf pan.
Bake for approximately 30 minutes, or until a toothpick inserted in the center of the cake comes out clean.
