Ingredients

    4 eggs
    2 TBS Agave
    2 cups half and half
    1 cup brewed coffee, cooled
    2 cups Almond Flour
    1 cup Coconut Flour
    1/2 tsp baking powder
    1/4 tsp baking soda
    1/2 tsp salt
    1 tsp ground cloves
    1 TBS ground cinnamon
    1 TBS ground ginger
    1 TBS ground nutmeg
    4 TBS butter, melted
    1 TBS coconut oil, melted

Tips

I added chopped bacon to add a bit more protein. I have added protein powder in the past, also but reduce the amount of coconut flour or increase your liquids a bit.
I have also added 1/2 cup of unsweetened cocoa powder for another variation.


Directions

Large bowl, mix together eggs and agave until well blended. Add half and half and coffee and stir to combine. In another large bowl, sift together flours, baking powder, baking soda, salt, cloves, cinnamon, ginger and nutmeg. Add the liquid to the dry and stir until just combined. Stir in melted butter and coconut oil.
Let batter stand while heating up the waffle iron.

Serving Size: Makes 20 smaller squares
