Ingredients

    Butter, 4 Tbsp
    Onion, 1 large, chopped or sliced
    Barley, raw, 1/2 cup
    Beef Broth, 2 cups
    Jalapeno Pepper, whole
    Left over Roast Beef with Vegetables, approx. 2 cups
    Thyme, 1 tsp
    Garlic salt, 1 tsp
    Parsley, dried, 1 tbsp
    Black Pepper, 1/4 tsp
    Salt, to taste

Directions

Melt butter in large sauce pan. Add onion and cook over med-low heat until onion starts to brown. Add barley and cook about 2 minutes, stirring often. Add beef broth, jalapeņo pepper and seasonings. Lower heat, cover and simmer about 40 minutes or until barley is tender. Add left over roast beef and heat through. Serve with crackers or toasted bread and sliced cheese.

Serving Size: makes 6 to 8, 1 cup servings
