Ingredients

    2 Egg Yolks from Farm Eggs
    2 TBSN Apple Cider Vinegar
    1 Tsp Yellow Mustard
    1.5-2 Cups Oil of Choice (I prefer anything but Olive Oil)


Tips

I have found this process is particularly tricky on hot days, if the kitchen or machine is too hot it will not turn out as you hope.


Directions

In a food processor, blend Yolks, Mustard and Vinegar until creamy.

While machine is still running, SLOWLY drizzle oil into the yolk mixture. Take your time and be patient, this part takes a slow and steady process.

Often I find that 1.5 cups of oil is sufficient to get the consistently desired. 2 cups can be added but be careful as you add the last 1/2 cup to not go too fast but also not take too long.
