Ingredients

    -12 oz Angel Hair Pasta
    -12 oz baby bella mushrooms
    -1 1/2 c. chopped carrots (7 oz = 200g)
    -1 1/2 c. sweet peas (7 1/4 oz = 207g)
    -1 1/2 c. chopped sweet bell peppers any color or combo
    (7 3/4 oz = 223g)
    -1/2 c. sliced fresh basil
    -3 garlic cloves, minced
    -1 tbsp. cornstarch
    -1 1/2 c. low sodium chicken broth
    - 1/3 tsp salt
    -5 Roma tomatoes, chopped
    -1/2 c. grated parmesan cheese



Directions

•Cook pasta according to package directions. Meanwhile, in large nonstick skillet, saute the mushrooms, carrots, snow peas, yellow pepper, basil and garlic in oil for 2-3 minutes or until crisp-tender.
• In a small bowl, combine the cornstarch, broth and salt until smooth; gradually stir into the vegetable mixture. Bring to a boil. Cook and stir for 1-2 minutes or until vegetables are crisp-tender and sauce is thickened.
• Remove from the heat; stir in tomatoes. Drain pasta; divide among six plates. Top with vegetable mixture; sprinkle with cheese. Yield: 6 servings.
