Introduction

This is a cleaned up version of the old stand-by hash. This get you started with some veggies first thing in the morning. You can top it with an egg or two, or fold it inside an egg white omelette. This is something my husband and I split on Sunday morning. I have an egg on top, he has two or three. Depending how hungry he is. This is a cleaned up version of the old stand-by hash. Ingredients

    1 medium sweet potato
    1 cup chopped red/yellow bell pepper
    1 cup chopped broccoli
    1/4 cup diced onion(red or white)I had white.
    1.5 cup chopped fresh mushroom
    Pam Spray

Directions

Chop your veggies, but keep in separate piles on your cutting board.
Spray your heated skillet, saute potato first for just a few minutes, add onion and peppers next.
Last, add broccoli and mushrooms.
Putting a lid on top will cook your veggies faster.

Serving Size: Half the batch.
