Introduction

Ingredients

    10 ounces frozen spinach (thawed)
    5 eggs (beaten)
    1 cup shredded cheese
    5 ounces Rotel tomatoes
    salt and pepper to taste

Tips

Still yummy with 1/2 the spinach
Can add sausage or bacon or onions or peppers...the options go on and on


Directions

Beat eggs
Add shredded cheese and spinach
Spray 12 muffin tins with Pam
Spoon mixture evenly between the 12 cups
Add spoonful of Rotel on top of each cup
Bake on 350 degrees for 20 minutes
