    4 - 4oz. Mahi Mahi Fillets
    1 Tbls. Olive Oil
    1 tsp. Minced Garlic
    1/2 White Onion Cubed
4 sliced rings of fresh pineapple 3/4 inch thick (center core removed)
12 Tbls. Jim Beam Teriyaki Gourmet Marinade
    1 tsp. tabasco

Directions

In a deep skillet preheat pan on med high heat.
Add olive oil, minced garlic, onion, and teriyaki marinade. Saute for 2 minutes. Add Mahi Mahi fillets and tabasco sauce. Cover the fillets with the marinade mixture. Put a lid on the skillet and let cook covered for 5 minutes. Flip Mahi Mahi fillets over and scoop sauce to cover the fillets once again, replace lid, and cook for an additional 5-10 minutes until fish flakes easily with fork. Good
Mahi mahi is a little fishier than I'd like...and the teriyaki was a bit too salty, but it still tasted great. - 6/11/08
