Introduction

Ingredients

    1 block of firm tofu
    1 can (15.5 oz) black beans*
    1 can (15.5 oz) fire roasted tomatoes*
    6 TBS Barbeque sauce of your choice (I suggest smoky-sweet)**
    4 TBS Chipotle Tobasco sauce***
    1/2 c red wine (go sweeter, if possible)
    1 TBS Fried Onion (find at any Asian Grocer)
    1 TBS Fried Garlic (Find at any Asian Grocer)

Tips

*Freeze and thaw tofu first for a better, meatier texture.
*Press tofu well so that it soaks up the tobasco.
*You can add other spices, etc-- but the chipotle tobasco is REALLY NECESSARY for the tofu itself.
* Serve over buns with vegan cheese (for traditional picnic style sloppy joes), or over tortilla chips/cornbread with veggies and a dollop of vegan sour cream for a more "tex mex" style meal.
* You can "fast track" this meal in a skillet or for one hour on High in crock pot-- but I find this is a disservice to the tofu. It really benefits from the lengthy, low heat cook of an all day crock pot.


Directions

drain tofu
mash tofu with a fork and the chipotle tobasco sauce
dump into crock pot with all other ingredients.
cook on low for 4 to 10 hours.
