Ingredients

3 large eggs
1/4 C non-fat milk
1 oz shredded cheddar or colby cheese
Fresh herbs, chopped, if you like
salt & pepper to taste
2 T fresh salsa
Smartbalance or other light spread for frying.
Directions
Crack 3 eggs into small bowl. Add milk, salt, and pepper. Add herbs, if using. Beat briefly until whites are broken up.
Heat a non-stick skillet on moderate heat. Add SmartBalance and swirl to coat.
Pour in eggs. Cook until they start to set around the edges. If you have a god non-stick pan, the whole omelet should move if you give it a swirl.
Add cheese, and flip in half. (should look like a half-moon). After 30 seconds, flip the half-moon onto the other side. Finish for 30 seconds.
Cut in half and plate each wedge. Top each half with 1 T salsa.
