Ingredients

1 1/2 lbs. ground beef
1/2 cup diced onion
1 tsp. iodized salt, divided
1/2 tsp. black pepper, divided
1 4-1/2-inch circumference cabbage, trimmed and coarsely chopped
1 14.5 oz. can of diced tomatoes, undrained
3 strips of bacon
Directions
Brown the ground beef. Add the onion and cook until translucent. Season with salt and pepper.
Put half of the cabbage in the bottom of a greased 9 x 13" baking dish. Season with salt and pepper. Top with the meat and remaining cabbage; season again.
Pour the tomatoes evenly over the cabbage. Lay the strips of bacon over the top. Cover with aluminum foil.
Bake for 3 hours at 325 degrees. Discard the bacon before serving.
