Ingredients

12 cups fresh baby spinach
1 cup thinly sliced white mushrooms
6 turkey bacon slices
1/4 cup olive oil
1/2 small red onion, thinly sliced
1/4 cup red wine vinegar
1 1/2 teaspoons Dijon mustard
Freshly ground black pepper to taste
Directions
1. In a large serving bowl, toss together the spinach and mushrooms, then set aside while you make the dressing.
2. In a large skillet, cook the bacon over medium-low heat until crisp, 5 to 10 minutes Set the bacon on a paper towel lined plate to drain.
3. Add the oil and red onions to skillet and cook for 10 seconds. Whisk in the vinegar and mustard and scrape up any browned bits stuck to the skillet. Crumble in the bacon and cook for 30 seconds.
4 Pour the hot vinaigrette over the spinach and mushrooms. Season with pepper and serve immediately.
