Introduction

Ingredients

2 Catfish fillet
2 small organic Zucchini sliced into spaghetti like strips. A large sharp knife will achieve this - just mind your fingers
1 tbsp Extra Virgin Olive Oil
1 tsp white pepper
1 tsp Garlic powder
1 cube Knorr Vegetarian
1 tsp onion powder
1 dash of salt
Tips
I ate this with a handful of rice crackers and one tomato.
Directions
1. Place a small stock pot on low heat, season the fish with the salt, half of of the spices and place in the pot. Pour half of the olive oil around the edges of the fish and cook for two minutes.
2. Flip the fish over and cook on the other side for another two minutes then raise the heat for 1 minute to brown both sides.
3. Remove the fish from the pot and put on a dinner plate.
4. Place the zucchini strips in the pot with the fish juices in it and add the remaining olive oil, spices, bullion.
5. Cook on high heat for 2 minutes - stirring continuously - or until it wilts and bleeds out a slightly creamy, butter colored 'juice'
6. Place alongside the fish and enjoy.
Serving Size: Could easily serve 2 if you added a salad on the side
