These moist and delicious muffins are made with dates and bananas as a substitute for sugar, but they are plenty sweet and kids love them. They are great frozen and reheated, so make this huge batch and save them in smaller batches for an easy breakfast. Ingredients

6 cups Unbleached All-Purpose Flour
2 cups Old-Fashioned Rolled Oats
3 tsp Baking Soda
1 tsp Salt
2 cups Chocolate Chips
500 grams Dates
1/2-1 cup Hot Water
680g Bananas, mashed (about 6 small)
6 Eggs, large
2 1/4 cups *Salted Butter, melted
1 cup Milk, 2%
6 tsp Vanilla
Tips
*If you use unsalted butter, increase the amount of salt you add to the recipe.
Freeze them in vacuum sealed bags or ziplock bags in smaller amounts. Thaw in the fridge overnight and pop in the oven for a few minutes to warm them and serve. They can also be thawed from frozen in the microwave.
Directions
Preheat oven to 350.
Mix all the dry ingredients and chocolate chips in a bowl. Set aside.
Create a date paste by blending the dates and hot water in a food processor. Empty into a large bowl.
Puree the bananas in the food processor and add them to the dates.
Melt butter in a saucepan and allow it to cool slightly.
Combine melted butter, milk, eggs, and vanilla with the dates and banana mixture. Mix them together with a spoon.
Add the dry ingredients and mix with a spoon until combined.
Measure 1/3 cup batter into prepared muffin tins.
Cook for 18-20minutes
