Introduction

Ingredients

    2 zuchini -chopped
    1 med onion choppped
    1 clove garlic-minced
    1/2 can coconut milk
    1cup frozen peas
    1/2 cup frozen corn
    1 cup no sodium chicken bouillon
    i-2 tsp curry powder
    1/4 tsp nutmeg
    1/2 tsp ground cloves
    1/2 tsp cinnamon
    dash of fresh ground black pepper

Tips

You could add lemon zest and ginger for a bit more taste.


Directions

saute onion in oil until it begins to caramelize
add garlic and saute for 1 min
add zuchini and cook until tender
mash or blend onion, garlic and zuchini until fairly smooth
add coconut milk, chicken broth, and spices
simmer for 10-15 minutes and taste to correct spices
add corn and peas and simmer for ten minutes or until vegetables are heated through
