Introduction

Low in Calories but High in Taste! Low in Calories but High in Taste!
Number of Servings: 10

Ingredients

    1 large can chicken broth (6 cups)
    2 cans corn
    2 cans black beans
    2 tsp. mined garlic
    1 large onion, diced
    2 tsp. each chili powder and ground cumin
    4 large tomatoes, chopped
    1/2 tsp. each salt and pepper
    1 tbls. fresh cilantro, minced
    3 oz. corn tortilla chips - broken into smaller peices

    Optional - FF Cheddar cheese, sliced green onion and FF Sour Cream and addtional tortilla chips as topping.




Directions

Spray stock pot with non-stick coating. Add 1 tsp oil and chopped onion and minced garlic. Saute until onion is soft. Add cumin and chili powder. Add beans, tomato and corn and saute about 5 more minutes. Break up totilla chips and mix into stock pot. Add chicken stock and season with salt and pepper. Bring to boil and simmer about 10 minutes. Stir in cilantro. If desired (I recommend this) you can blend this with an immersion blender until it's creamy or you can use regular blender adding a couple of cups at a time and blend until smooth. Serve with optional toppings and enjoy. Makes aprox. 10 1 cup servings.

    i modified this with veggie broth and canned tomatoes and it was excellent. - 3/1/09
